When my wife told me that I had to create a meal featuring Gay Lea products, I inside voiced a little giggle like a kid in a candy store. Coming from a strong restaurant and culinary background, I went back to basics and decided on comfort foods fit for any and all dads enjoying all their favourite sporting events. That being said, lets get the gameday feast started!
First on the block is a twist on a pub and gameday favourite. Potato skins with a twist. I call these little delights — Twice Baked Stuffed potatoes.
Simply bake your potatoes until they are fully cooked and let them cool off. Cut your baked potatoes in half and scoop out the flesh making sure to leave a wall of flesh around the sides (you can dig out most of the bottom). Take all of the dug out flesh of the potatoes and mix in a large bowl garlic powder, salt and pepper and about 2/3 cups of Gay Lea sour cream and 2 squares of Gay Lea salted butter. Set your oven to broil and let heat up fully. Fill your potatoes back up with your potato mixture and return to oven for 2-4 minutes. Add shredded cheese to the top of the potatoes and return to oven until the cheese melts. Top with sour cream, a square of Gay Lea salted butter and fresh green onions then you’re set for an appetizer that leaves you begging for more!
What? You haven’t experienced a true Canadian winter? Let me tell you it gets biter cold here. Nothing better than a delicious and hearty bowl of my 3 Alarm Slow Cooked Chili. This my friends redefines comfort food.
Simply brown 1.5 pounds of ground meat (your choice). I like to use and beef and pork mixture for a leaner flavour.
coarsely chop one medium onion, one red, yellow and orange pepper as well. Mince 5 cloves of fresh garlic and add to your ground meat and let it cook down until your veggies are al dente. Add one box of liquid beef stock along with two small cans of red kidney beans (add the water too!). Add one can of diced tomatoes with the juice as well and a small can of tomato paste. I like to use half a can of crushed tomatoes as well. For a 3 alarm chili I use just under five table spoons of chili powder and six good shakes of worchestersire sauce. Cover and let simmer for 1.5 hours. Have no fear if it is too spicy for you, the final ingredient to this classic is a healthy dollop of Gay Lea sour cream on top to be stirred in at the end. Not only does this help ease the heat, it gives the chili an incredibly rich and creamy texture.
Can’t get enough of the chili? Enjoy it all over again and make a simple nacho appetizer become a heart meal I like to call the Chili and Cheese Colossal Nacho. Guaranteed to make you eat this traditional finger food with a fork or shovel. Ha ha, I meant spoon.
Start with a layer of nacho triangles. Spread two cups of your chili all over the layer of chips. In a piping bag, spread some Gay Lea sour cream over the chili and add shredded cheese. Layer on another round of nacho chips and repeat the above step less the sour cream. At this point your mountain should be plenty high. Have your oven set to 450 and cook your nachos until the top layer of cheese is fully melted. Add a generous portion of salsa, sour cream and top with fresh green onions. Presto, you are now ready for your colossal nacho adventure.
Oh I think I’m forgetting something, ah yes. Lets wash down all these gameday delights with frozen peppermint hot chocolate.
Im not a huge fan of frozen drinks at the best of times but when my wife and kids like a little frozen treat, this is definitely one of my top go to drinks. Have blender, will enjoy!
All you need to do is add an 8 ounce hot chocolate to your blender with three cups of ice, one cup of milk, half a cup of cream and 1/4 cup chocolate sauce. Now here’s the tricky part. peppermint extract as I use is extremely potent so start with four to five drops first. you can always add more to suit your peppermint needs. set your blender to smoothie an in about a minute you will be in frozen peppermint hot chocolate bliss. Top with Gay Lea real whipped cream and a drizzle of chocolate sauce and your gameday adventure is complete.
These recipes are perfect for any afternoon sporting event, sporting social gathering or just an afternoon with the boys to watch your favourite teams face off!
