I don’t know much about the United States history but I do know this 4th of July is Independence Day. July 4, 1776, was a day that represents the Declaration of Independence and the birth of the United States of America as an independent nation.

Following this independence, America has been faced with many issues since becoming its own nation. These issues vary from the recession to terrifying terror attacks, however, recently America is able to celebrate how far they’ve come and how they’ve been able to pull together and overcome these issues. Following Obama’s State of the Union Address (check out here), the people of America will be celebrating their heritage proudly as they look to continue this prosperity in the future.

So, from us here in Canada – we’re wishing the USA a happy 239th year of Independence! That’s huge. 239!

In honor of this special day how about some Blueberry Pie CUPCAKES! Yes, aren’t they adorable. Little cupcakes decorated as Blueberry Pies. I can’t even – how can we eat them, they look so cute?

4th Of July With Blueberry Pie Cupcakes
Ingredients
  • CUPCAKES:
  • 1/2 C unsalted butter, room temp
  • 2 egg whites
  • 2 eggs
  • 2 C flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 baking soda
  • 3/4 C buttermilk
  • 1 1/2 C sugar
  • 1 tsp vanilla
  • FROSTING:
  • 1 C unsalted butter, softened
  • 3 C powder sugar
  • 1 tsp vanilla
  • 3/4 C heavy cream
  • Tan gel food coloring
  • BLUEBERRIES:
  • Blue Berries:
  • Bag of Tropical Skittles…. use the blue ones.
  • PIE CRUST:
  • 2 egg whites
  • 1 C powder sugar
  • 1/2 tsp cream of tarter
  • Add 1/4 C powder sugar until stiff peak form
  • Tan gel food coloring
Instructions
  1. CUPCAKES:
  2. Preheat oven to 350 degrees.
  3. Line cupcake pan with paper liners.
  4. Sift flour, baking powder, salt, and baking soda together in a bowl.
  5. Beat butter on high for 30 seconds.
  6. Add sugar and vanilla extract to the butter until well combined.
  7. Add egg whites, one at a time, mixing after each.
  8. Add eggs, one at a time, mixing after each.
  9. Add 1/3 C flour mixture to the wet mixture followed by adding 1/3 C of the buttermilk; add 1/3 C flour mixture again then add 1/3 C buttermilk mix on low speed, add 1/3 C of flour and add the rest of 1/3C of buttermilk mix in low speed until thoroughly blended.
  10. Scoop the batter into the lined cupcake holders till 2/3 filled.
  11. Bake at 350 degrees for 20-25 minutes or until an inserted
  12. toothpick comes out clean.
  13. Cool for 10 minutes.
  14. Remove to a wire rack until fully cooled
  15. FROSTING:
  16. Beat the softened butter on its own until smooth.
  17. Add vanilla extract.
  18. Add powder sugar with heavy cream into the creamed butter until it becomes a smooth and thick texture.
  19. If the frosting is too thick, add more heavy cream, if the frosting is too thin, add more powder sugar.
  20. Take a spoonful of the frosting and hold the spoon upside down if the frosting drops off the spoon add more powdered sugar .
  21. Take 1 C of the white frosting in a bowl….. Second bowl add several drops of tan gel food coloring… stir well……Second bowl add several drops of blue gel food coloring…. Stir well.
  22. Using a butter knife spread the white frosting on each of the cupcakes. This will act as the “glue” for the “blueberries”
  23. BLUEBERRIES:
  24. Place individual blue skittles on the frosted cupcakes as if they were blue berries.
  25. PIE CRUST:
  26. Using the tan colored icing …. scoop into a pastry bag with a medium sized tip.
  27. Outline the cupcake to look like a pie crust.
  28. Scoop the rest of the tan frosting into a smaller pastry bag with a small tip to make crust marks across the top of the “blue berry pie”.
