Deliciously Stuffed Mushrooms Recipe #BornOnTheFarm

Being more healthy. I think we can all agree we could all use a little more healthy in our lives, right? Well, I know for me it’s something I am being conscious of and adding different recipes to our meal plan is something I have been working on for the last few weeks. This month of our Gay Lea feature I decided to try out some deliciously stuffed mushrooms.

Not only are they full of delicious they are also pretty good for you, and you’d think kids would think “yuck! Mushrooms” but my kids enjoyed these.

If you have made Stuffed Mushrooms you know there are many different ways to stuff them. For ours, we added some Gay Lea Nordica Cottage Cheese. We wanted to pack them with some protein, and by using Gay Lea, we made sure not to ruin the integrity of the dish. Gay Lea added a smooth, deliciously, creamy texture that these stuffed mushrooms needed. They turned out just fantastic.

Ingredients Needed:

  • 15 medium/ large mushrooms
  • 1 cup Gay Lea Cottage Cheese
  • 1 cup Cream Cheese
  • 1/2 cup Parmesan Cheese
  • Four cloves Finely Diced Garlic
  • 1/2 teaspoon Salt and Pepper
  • 1 cup Shredded Marble Cheese

Instructions:

  1. Wash your mushrooms and pat dry with paper towel
  2. Set aside your 1/2 stick of cream cheese to soften
  3. In a medium bowl combine Gay Lea cottage cheese with salt, pepper, and garlic.
  4. Add the softened cream cheese and mix just until ingredients combined.
  5. Slowly add the Parmesan while mixing.
  6. At then end of mixing, add shredded cheese and gently fold into the mixture.
  7. Gut mushrooms leaving a nice sized hole for the filling.
  8. Using a tablespoon, fill the mushrooms until just overfilled.
  9. Cook on 350 for 18-20 mins then broil until filling starts to brown and crust.

Before these, we hadn’t had stuffed mushrooms in a very long time. I had forgotten all about them. I was reading up about the theme for May with Gay Lea, which was “Healthy Meals” when Stuffed Mushrooms popped into my head. I am glad it did because these were a tremendous hit – especially with the kids!

If you have been reading the blog for a little while now, you’ll know I’ve started on this new journey to not only find my true self again but to bring back my body to where I feel comfortable and confident. My last pregnancy took a toll on my body as I was diagnosed with Gestational Diabetes and gained a lot (and I mean a lot!) of weight.

So, I am trying to bring healthier meals to the table. Not that I didn’t before, but now I’m trying to bring new meals. I am sick of the same ole’ so exploring all these different recipes has been a lot of fun for me, and hopefully for you as well.

Did you know: Mushrooms contain more protein than most vegetables.

I’m the first to admit I am not much of a veggie fan, but my kids are. Well, all of them except the oldest that is (he is as picky as me!), so it’s great to know that mushrooms contain more protein than most vegetables and that mushrooms contain mainly, no salt.
