Oh what a day! Yesterday was a milestone. Not your typical child milestone but one for the grown-ups. Yes! It was our 10th Wedding Anniversary! Never in a million years would I think this day would come. But, it did, and it was fantastic! I can’t even begin to describe how happy I’m feeling right now, getting to my 10th Wedding Anniversary is just wow – I never thought it would happen. I always saw my friends and family reaching this milestone, and they’d be treating themselves to things like these anniversary rings for women and I’d just be like will this day ever come for me? And it did!
I wanted to make something delicious and special for our anniversary so I thought dessert something sweet, buttery and delicious. I wasn’t too concerned with the main meal because we decided to go with something simple all the kids would love, Meatloaf muffins won the meal and I had planned to go with brownies shaped as hearts to go with a love theme but had a little mishap with the mould, so I decided on stars.
Anniversaries are special because although they come once a year, they show another year gained and spent with the one you love. We didn’t have a traditional wedding, we got married in my in laws living room and although I always longed to have a white wedding in the winter with a gorgeous white gown – I didn’t need it. I’m one of those girls who enjoys the small things and doesn’t need anything fancy to celebrate anything. Not even something as simple, complex, romantic and inspiring as love. Standing in a room, was all I needed… do you know what we ate that day right before saying I do? I’ll give you a hint: it starts with an M and sells greasy fries and burgers. Yup, that’s right. Told ya, I’m a simple gal. Do you know what we had for dessert that night after we got home? BROWNIES!
Back then we had 2 kids and were expecting Ava. We now have 7 amazing children to spend these wonderful anniversaries with us. So I always make sure to include them in any plans we have when it comes to us, which I know isn’t ideal for all – but it works for us. This year I made a choice to include them in our special dessert too. Something we would all love and enjoy; I made homemade brownies with homemade buttercream frosting and homemade caramel sauce. Can you say indulgence? It’s one of mine.
My husband, as sweet as he is isn’t a big sweets fan. So I was really excited when he was looking forward to trying our yummy sweet dessert. Side note: I have never made a special dessert for our Anniversary before nor have I ever made anything for our Anniversaries, he has been the one to do it for 9 other years.
This year, it was my turn.
I decided to go with brownies because I crave them all the time, and they are very easy! Also everyone loves and adores them so why not? I needed to make them a bit more special for this special occasion however so, a fun shape and some fun toppings it would be!
What could be better than chocolate in brownies, plus a delicious vanilla frosting and caramel drizzle!
Star Brownies with Homemade Buttercream Frosting and Homemade Caramel Drizzle
- 1 cup cocoa powder
- 1/2 teaspoon baking soda
- 2/3 cup melted gay lea salted butter, divided
- 1/2 cup boiling water
- 1 and 1/2 cups sugar
- 1 1/3 cups flour
- 2 eggs
- 1 teaspoon vanilla
- 1/2 package chocolate chips
Preheat the oven to 350 degrees.
- In a bowl, combine cocoa powder and baking soda. Blend in 1/2 cup melted butter. Add boiling water and stir until blended
- Stir in eggs, sugar, and leftover butter – Add in slowly; flour, vanilla, and salt. Fold in chocolate chips.
- Pour into a greased 8×8 pan and bake at 350 degrees for 30-35 minutes.
- Once cooled remove from pan, and use cookie cutter to cut out shapes. Put dollop of frosting, and top with caramel drizzle.
* For thicker brownies use 8×8 pan, for thinner use 9×13
We also Gay Lea butter because it adds a rich buttery flavour to every recipe I use it in, and I generally pick the salted butter so I don’t have to use extra salt in the recipe. These brownies are really rich, and very buttery. It’s a difference you can really taste. So, using Gay Lea butter will help make this recipe taste the very best!
For the buttercream frosting we used this recipe.
I have never been able to make a good frosting or icing on my own. Thankfully I was able to find this great recipe that really worked well, and once completely made fluffed up really well. So, I recommend using this recipe if you want to make these brownies as it pairs so well with both the brownie and drizzle!
Homemade Caramel Drizzle Sauce
- 1 Cup firmly packed brown sugar
- 1/2 cup 2 % milk
- 1/4 cup gay lea salted butter
- 1 teaspoon vanilla
- In medium sauce pan bring milk, butter and brown sugar to gentle boil. Continue cooking until thickens, about 1-2 minutes.
- Gently add in 1 teaspoon vanilla (or vanilla extract)
- Remove from heat, and drizzle.
We had a quiet evening, enjoyed some good food and indulged in brownies. I love being able to include my kids in our special days, it makes them even more special. We also had a great time looking back at photos and talking about memories. It was an all around great day, and my kids requested I make these brownie stars again for Valentine’s Day! Of course, because brownies are a HUGE weakness of mine I’ll oblige!
