Homemade Pancake Waffles

Homemade Pancake Waffles - delicious, easy and kids just love 'em! - sixtimemommy.comBreakfast is probably my favorite meal. It doesn’t usually happen often for me in the mornings because I am never hungry in the morning but when I want breakfast, I want breakfast. I want the works, and my kids love when I get in the mood for breakfast, especially for dinner.

Breakfast for dinner is a favorite of many – You’d be surprised how many times I see it mentioned on facebook statuses and on twitter.

Bacon, Eggs, Toast, French Toasts, Sausages, Waffles, Pancakes – you name it, we love it!

What could be better than all your favorites on one plate? Well, how about all your favorites on one plate BUT instead of wasting time making pancakes and waffles what if you were to make pancake waffles. WHAT!? Yes, How delicious does this look?

panwaf2Delicious. You can top it with any of your favorite fixins’ like blueberries, strawberries, peaches, pineapples, whipped cream, and even chocolate chips! My kids think this is brilliant because they are strips and not boring circle pancakes!

Homemade Pancake Waffles
Ingredients
  • 2 cups Flour (use coconut flour to make gluten free)
  • 2 tablespoons Sugar
  • 2 tablespoons Baking Powder
  • 1 teaspoon Salt
  • (optional 2 tablespoons Soy Flour to make Egg Free)
Instructions
  1. In a large bowl combine the ingredients with a whisk. Store in an air tight container.
  2. Add one cup of water and one cup of milk to a bowl. Add in 2 tablespoons of oil and 1 tablespoon of vanilla. If you didn’t use the Soy Flour add in 2 eggs. Whisk.
  3. Add in your dry ingredients with your wet ingredients. Whisk but leave slightly clumpy.
  4. Spoon batter into waffle iron of choice and follow it’s instructions.
  5. Top with powdered sugar and blueberries once fully cooked.
  6. Serve and enjoy!

I’m not a real pancake lover myself. I’m more of a french toast, bacon, sausages and eggs girl. But, my kids love pancakes. Making different types of pancakes and making sure we change it up to be a bit different makes the kids want to eat them more and even request them! These sticks are sure to be a big hit!

  1. I am all for stuff like this. We have brinner at least once a week in our house (usually twice), so I will definitely be trying these.

  2. I will pin this under my ‘Healthy Recipes for Kids’.. you mention coconut flour so that is a great alternative I’ve never tried or even knew how to use.

  3. Pinned!
Breakfast is certainly my favorite meal of the day. This reminds me of a cool story of a diner I visited as a kid on the way to New Hampshire from New Jersey. I wanted waffles but they didn’t have them. So to surprise me, the waiter put pancake batter in a grilled cheese press and they looked like waffles!
The cool part of that story is also that I wound up moving to that same random town with the diner. Coincidentally. My travels took me here.
And I take my kids. Although they do have waffles now.

  4. wow! These look so good! My 14 yr old loves pancakes and waffles so this is perfect! I am going to do these on Sunday! Your pics are great! Question- does Coconut Flour taste like coconut? I have never tried it, but want to .

  5. I have a waffle maker and love it! It is definitely my go to for breakfast on the weekends. Nice crispy waffles with fruit. My kids add different fruits to the batter sometimes. Thanks for the recipe!

  6. They do look tasty! We usually do a big family breakfast every Christmas and blueberry waffles are always on the list. I might have to suggest changing it up to blueberry pancake waffles now!

  7. This would be a good pick up snack. My family is constantly on the go, rushing here, there and everywhere. Waffles with any fruit in season is so easy to make, easy to pack and can be enjoyed anywhere. Thanks for sharing.

  8. Those are so cute. I bet the kids just love them. I love how the fruit just sits right in there. I am a french toast person too but I will eat pancakes. We love having breakfast for dinner every once and awhile. Omelets are a favorite of ours for dinner.

  9. What a fun idea. When the kids can’t decide which they want, I’ll whip this out as an option and they’ll laugh, but love it!

  10. My friend and her daughter and I are getting together to discuss what I’m doing for her wedding flowers. We are planning a breakfast for dinner night. These would be fantastic!

  11. These look so delicious and easy to make. I will have to try making these for breakfast. I am sure they will be a big hit.

  12. We love waffles in this household too. Loads tons of fruits with whip cream…. Oh my gosh, so yummy!

  13. Breakfast is also my favorite Meal of the Day and you have combined two of my favorite things :-) It looks fluffy and crunchy all at the same time :-)

  14. ooh… These looks delicious and so simple to make. I love to make recipes from scratch and I like that you recipe has a small ingredient list.

  15. I’m a huge fan of “brinner” & even more of pancakes & waffles. You better believe I’m making these for my family this week!

  16. Love that waffle iron!!! everything tastes better in stick shape, right? At least it gets the kids attention more than just a regular circle, that’s for sure. I would personally use more almond flour with a bit of coconut flour. It makes for a better gluten free pancake.

  17. I love having breakfast for dinner. Eggs, bacon, the works! I love the shape that your wafflemaker makes. Great for taking on the road.
