I decided to try out a recipe from the book, because how else can you be sure these are delicious meals? Well, I’m blown away. We tried the Meatball Casserole, and it was incredible.
We are huge fans of meatballs in our house, but I’ll admit, meatballs aren’t something we make often. I knew when I saw the recipe it would be a hit with the family so for our first recipe out of the book we chose it and I’m so glad we did.

The recipe was straightforward to follow. This recipe does call for shredded part-skim mozzarella cheese on top. Since some of our kids can’t eat mozzarella, we opted to use cheddar cheese instead. It turned out just incredible. We’ll make it with mozzarella another time for date night because I can’t wait to have this again!
If you have picky eaters like a couple of our kids; this is the perfect dinner for them. Not one of my kids had any issues cleaning their plates, and we all had happy bellies afterward. I know sometimes it can feel like creating healthy meals can be hard but they don’t have to be.
