Having two little girls who also want to be bloggers is really fun. Both my girls have ideas of what they want to do when they are older, but in the meantime want to try their hand at blogging. Kyla has been wanting to follow in my footsteps for a little while now. Every time I’m taking photos of something she’s right behind me snapping away with her phone. When I’m doing up a recipe to post she wants to help any way she can. It’s really cute. With Easter right around the corner we had to take advantage!
Today’s recipe is just that. Kyla helped me do these, and I’m really proud of her and the initiative she took while doing this.
We’ve been doing fun things for Easter as it’s coming really quickly! We decided to do up our very own Peanut Butter Krispy Eggs! This way we know what’s in them, we made them ourselves and they taste way better than store-bought!
We are really excited about Easter this year. With Justin a little bit older we have been talking to him about Easter. He can’t stop talking about the Easter Bunny. Of course, the older kids all know the real story behind the Easter Bunny, but when they are really little it kills me not playing along, so we do for a little bit.
Kids are only so small for so long and they deserve a little fun, and mystery even if it’s not so truthful, right?
For these delicious Peanut Butter Krispy Eggs we only used a few ingredients:
You Will Need:
- Melting Chocolate in any color (we used pink) and about 6oz.
- 1 Cup of Smooth Peanut Butter
- 2 Cups of Powdered Sugar
- 1 Cup of Krispy Rice Cereal
In a mixing bowl mix all ingredients (minus the chocolate) until smooth and well blended. Scoop out a teaspoon full and roll into a ball in your hand. Flatten and shape into eggs. I have an issue with that because apparently, I can’t shape things like eggs! Who knew. Anyways, once you are done with the shaping place on parchment paper on a plate and put in the freezer for max. 10 minutes. Any longer and they will be rock hard.
While you wait, heat up your melting chocolate and get your decorations for them ready. I decided I would use sprinkles and the spring time m&m candies. Do not wait to put them on, this is why I was so thankful Kyla was there to help me. As I was rolling them in the melted chocolate she was decorating them!
After 10 minutes, and your chocolate is done melting place the peanut butter shaped eggs in the melted chocolate coating and rolling with a fork. Place on parchment paper and quickly decorate. Don’t wait, they get hard fast. Once you are done, you will get about 40 eggs, place back in the fridge or leave on counter to set. They are SO good and turn out really cute.
I think next time we do this I will get ALL the kids involved in helping decorate. They loved snacking on them, and I enjoyed two of them with my tea! They are small enough that you can enjoy a couple while being sweet enough that you probably won’t overdo it too much!
I will probably end up making these again around Easter for everyone to enjoy. The kids want to make them for their friends and deliver little baggies to some family. I think it would be lots of fun, and with how delicious they are they won’t be a treat unappreciated!
