It’s finally May, and that means in some parts the weather is turning more like Spring, of course not where I live. It’s still pretty cold here and we’ve had quite a bit of rain but that doesn’t stop me! This delicious and oh so easy Pineapple Avocado Smoothie is a family hit, the kids love it and I think you will too!
My kids are huge fans of pineapple, my oldest would sit and eat a whole pineapple in one sitting if I’d let him. So it’s a given that any time we have pineapple in the house I need to use it up quickly or it will disappear. My kids however don’t like avocado. None of them, and I’ll be honest – neither do I. This is a great way to get some avocado into kiddos especially picky kids like some of mine can be!
If you are looking for a quick smoothie, to take on the go, enjoy in the backyard, or just sit down and relax with – this one is for you!
Ingredients:
- 2 cups pineapple chunks
- ½ cup frozen avocado
- ½ cup coconut milk
- 2 tablespoons coconut flakes
- 1 cup ice
- 1 tablespoon raw honey
- Toasted coconut for garnish
Directions:
- Combine pineapple, coconut milk, avocado, coconut flakes, and ice in a blender.
- Blend until smooth, add more coconut milk if you want it thinner.
- Pour into two glasses, garnish, and serve.
It’s super pretty to look at and delicious to enjoy. The fact my kids have no idea avocado is in there makes me smile, and even my most picky eaters enjoy this. I’ve only made it twice, but they keep asking so it will now be a staple in our house this summer!
Of course, we will have more smoothie recipes to share. I’m not the biggest smoothie fan, but it’s a lot less mess than a popsicle or ice cream for my younger kiddos so we will be sharing throughout the summer. Stay tuned!
