Before being diagnosed with Gestational Diabetes Lemonade was one of my all-time favorite drinks. I love how you can make it as bitter, sweet or tart as you like. I love that you can add fruit and make it unique. It’s always been refreshing and always quenched any thirst I had.
But, when that day came that I was diagnosed I wasn’t able to drink it anymore. Now I’ve found I can have this recipe I just need to replace the sugar with Splenda, which I don’t like having very often so this is a rare treat for me until I can drink it normally again.
Blueberry Lemonade Recipe:
Blueberry Syrup
- 1/2 cup blueberries
- 1/2 water
- 1/2 cup sugar (honey or splenda works too – but lemonade with honey tastes a bit different)
Directions for the syrup: Combine the ingredients above in a saucepan over medium heat. Stir until the sugar is dissolved and bring to a slight boil. Reduce heat and simmer until the berries have broken down…. about 5 mins.
Strain in a fine sieve. Allow to cool.
Lemonade:
- 1 cup of fresh lemon juice (about 8 lemons)
- 5 cups water
- Sugar
- Ice Cubes
Directions: Mix lemonade ingredients and blueberry syrup together. Test for sweetness – you may need to add more sugar if too tart! (this is more of a personal opinion). Serve with ice and blueberries and some slices of lemon.
If you are a big fan of lemonade this is a recipe you will want to try! Make a big pitcher, keep it in the fridge or fill it with ice and bring it to the backyard to enjoy with a good book!
Before this recipe I enjoyed normal lemonade but now Blueberry Lemonade is at the top of my list. So good and so refreshing!
